Quick and Easy Taco Soup

Ingredients: 2 lb. ground sirloin, 1 lg chopped onion, 1 dry seasoning pkg. of ranch dressing, 1 dry seasoning pkg. of taco mix, 3 cans pinto beans, 1 can Rotel tomatoes, 2 cans of chopped tomatoes, 1 can cream corn, 1 can of whole corn

Brown the meat and saute the onions in the bottom of a soup pot, then add the other ingredients. Do not drain any of the cans -- because the are the soup stock. Simmer until soup is hot and serve. Serves 6.

Grits Souffle

Ingredients: 8 oz. grits, 3/4 lb. diced cheddar cheese, 6 egg yolks, 1 qt. salted water, 1 c. cream

Cook grits in salted water according to the directions on the package. When the grits are done, add cheese. Combine cream with egg yolks, beat well, and then stir into grits. Bake, uncovered, about 25 minutes at 350. Serves 10
